A symphony of soil, fruit and wood
Named after Ceres, the Roman goddess of agriculture and fertility, this wine reflects the commitment to sustainable viticulture in the Celestial Empire, where careful cultivation brings out the true character of the terroir.
Made from fully ripe Riesling grapes, a large proportion of the must was fermented on the skins before being pressed and matured for over 12 months in barrique barrels. The result is a powerful, structured wine with a rich texture and natural complexity, which is elegantly complemented by ageing in wooden barrels.
The intense and complex fragrance of Ceres reveals aromas of smoke, dried apricot, fig, orange peel, malt and herbal liqueur. On the palate, the wine is full-bodied, dense and powerful, carried by a spicy acidity, ripe phenols and noticeable alcohol warmth – a wine with real presence.
Further tasting notes describe nuances of orange marmalade, caramel, brittle, raisins and mint and emphasize its versatility, inviting character and warm summeriness.
In the glass, Ceres is a bright amber color. On the palate, it offers a multi-layered interplay of citrus, meadow herbs, stone fruit and a mineral backbone structure, characterized by long contact with the yeast and maturation in wood.
Pairing Suggestions
Perfect with a risotto with radicchio and walnuts, as well as with veal in cream sauces, butter-tender fish, white asparagus or mature semi-hard cheese. Its depth is also an excellent accompaniment to herb-accented vegetarian dishes and poultry roasted with lemon and thyme.
Serving Suggestions
Serve well chilled at 8-10 °C. Decant for 20-30 minutes to develop its full aromatic and structural potential.
